It’s not a crack or shatter, but the spiral itself that draws the eye, and the aroma of soy-glazed Kurobuta hot dogs that entices passersby into our shop. Seared Japanese hot dogs made with heritage Kurobuta pork – often deemed the “Wagyu of pork” – are set atop shallot oil-sautéed sticky rice and shiitake mushrooms, wrapped in laminated brioche and dusted with sesame furikake.
Hot dogs are a staple in many Asian bakeries, and it’s no wonder that this decadent savory pastry has become a best-selling Papa d’Amour signature here in our Greenwich Village shop.

This recipe is a nod to one of Chef Dominique Ansel’s own go-to late night snacks after long days in the kitchen: seared hot dogs over rice with a drizzle of dark soy sauce and a fried egg on top. The definition of simple and satisfying comfort food in each bite. Chef Dominique was so inspired by these nostalgic flavors, he decided to put his own spin on it here at Papa d’Amour.
