Papa d’Amour is home to the original butter-dipped ice cream, first created by Chef Dominique Ansel in summer 2025 after he visited the Isigny Ste. Mère dairy farm in Normandy, France (where we source all our butter from) with his children.
Inspired to create a different way to enjoy ice cream – one that celebrates butter! – Chef Dominique’s latest innovation has got New Yorkers and dessert lovers alike from all around the world stopping in year-round for this NYC-exclusive treat. The Story Behind the Swirl
It all begins with organic A2 milk that’s transformed into creamy vanilla bean soft serve, dipped into a thin layer of Isigny Ste. Mère French butter (the same butter used in all our croissants!). To finish: a sprinkle of fleur de sel, a hand-harvested French sea salt that adds to the intricate flavor profile (plus: there’s even a little mochi surprise hidden at the bottom of the waffle cone for that last bite!).
Since its debut here at Papa d’Amour in Summer 2025, our Butter Vanilla Soft Serve has been a menu staple all-year-round, quickly becoming a viral dessert sensation right here on University Place.
